HARVEST: Picked at the end of February, at midnight when the fruit is cool and fresh, to capture their natural, crisp, fruit flavors.
PRE-FERMENTATION MACERATION: 6-8 hours under 5ºC with the skins (inox tank).
FERMENTATION: The new, clean pink juice is slowly fermented under 15ºC. No Malolactic.
TASTING NOTES: This crisp rosé is refreshing and expressive. Bright red fruit aromas of cherries and raspberries linger over a racy palate. With a mouthwatering acidity, this wine is easy to drink.
PAIRING: This wine is an amazing aperitif but will pair well with raw fish, carpaccio, sashimi and sushi. Light salads and classic canapés are also ideal matches for this delicate wine.
